The following views are my personal opinions and beliefs and have no scientific support what so ever!
Can a cellist play other than Classical music?
Yes, absolutely. It is a matter of practice, music consumption, attitude and interest.
Make sure that the cellist you hire for performing pop/rock or jazz also listens to that genre. In that way you will get a performance where the musician puts his/her heart into it both on stage and in the preparation for the performance, making sure that the arrangement sounds good for that genre.
Another thing to consider when hiring a cellist is definitely technical abilities. Non-classical music is as sensitive as classical music to pitch. And here the cellist needs to be ready to adapt to the surroundings to create the perfect pitch, it might not be the absolute pitch that is the is the correct one.
It is a great advantage if your cellist knows how to improvise, write their own melody or can play from chords. And if she on top of that likes what she’s doing, imagine what could be achieved! ;)
